The Garden sage is grown in my garden during the summer months. The stems are gathered and brought in and placed into a basket with a cotton cloth covering the herbs until they are dry. When the sage is dry the leaves are stripped from the stems and placed into an herb grinder. This ground sage is placed into a zip lock snack bag instead of the flip lid container. The bag contains the amount of 2 of the plastic containers No chemicals are used in my garden. Pretty much organic, but not certified. I HAVE SEVERAL DIFFERENT DRIED CULINARY HERBS GROUND/WHOLE LEAF, FRESH/dried LEMON GRASS, Mexican sunflower seeds, POTHOLDERS, OVEN MITS, TEA BAGS.

A sweet-yet-savory jam, made with our farm-grown garlic, slow-roasted to caramelized goodness with balsamic vinegar and red wine. This jam is fantastic on steaks and other dark meats, amazing as a pizza sauce with bacon, for with cheese and crackers, over cream cheese like with pepper jelly for dipping, or on a grilled cheese or sandwich. I always use low-sugar pectin for my jams and jellies, so this has about 2/3 the sugar of a regular jam. Harvested from wild plum trees on our farm, this jam is delicious and quite tart! We puree and strain the plums to make a jam that is a thick but smooth texture, similar to apple butter, and sweeten it just enough to not pucker you up. The plums contain natural pectin, but we added a little Pomona's Natural Pectin to make sure it is a nice thick-set jam. This pectin activates with calcium rather than sugar, so we can use much less sugar than commercial jams (the acidity of the fruit is the active preservative in this case). We work hard to get all the pits out of the jam, but just a word of caution, there will probably be a piece here and there. We will continue refining our process for both efficiency and effectiveness!
