Dug this spring from a grove in my yard and potted in gallon pots. These are first-year plants, still small, and may not bloom next year. This native shrub, American Elder or Sambucus canadensis, has been known for its delicious fruit (for use in jellies, pies or wine) since native American times. It has more recently been used in landscapes for its spectacular blossoms and dramatically colored berries. The Elderberry is also a fantastic wildlife habitat, providing both shelter for small animals and a healthy food source. Elderberries are both drought and cold-tolerant, adapt to almost any soil type and most drainage conditions and have few pests. They grow 6 to 12 feet high in an oval or rounded shape. The white flower clusters are generally 6 to 10 inches in diameter and are very showy with a nice fragrance. This lovely fern grows around 12-18" tall and slowly multiplies to form a large clump 24" across. The fronds are approximately 18" long and are a soft-grey metallic color with hints of red and blue. The center stem is red so the contrast is excellent. This variety has more burgundy color at all seasons than the other one I offer. This fern prefers partial rather than deep shade. It is an excellent contrast plant to other shade perennials, such as Hosta, bleeding hearts, columbines, astilbe, and heuchera.

Ostrich fern is popular for its erect stature and graceful arching fronds (leaves) resembling huge ostrich feathers, up to 5 feet long and 3 feet wide. Each frond is cut into numerous leaflets and subleaflets. As they mature they spread at the tip, creating a lovely canopy effect. Ostrich fern is very easy to grow in a variety of light exposures, but prefers shade or partial shade. It colonizes fairly fast by spreading rhizomes, eventually forming large, glorious colonies, but rarely becomes invasive. Ostrich fern grows best in moist, rich soil conditions but tolerates occasional drought when established. It's excellent around a pond or in a damp border. Few plants impart such a light, airy, cooling effect in the landscape, or provide such a range of foliage textures for the garden, as Ostrich fern. Fiddleheads are edible, and this is the preferred species to eat. However, it should only be eaten in moderation as all ferns contain varying amounts of carcinogenic compounds. The plant is not evergreen, but the fertile fronds turn black and persist through the winter. They perform better and better with age. Do not plant too deep; set the crowns at or just below soil level. A year-round mulch is recommended. Zones 2-7, and native south to Virginia and Missouri.

Botanically, browallia (Browallia speciosa) is a tropical perennial but it’s mostly grown as a warm-weather annual. This basil plant displays dark green leaves and cinnamon colored stems. Cinnamon basil plants contain cinnamite, a compound that gives the herb an intense, spicy aroma and cinnamon like flavor. Cinnamon basil is sometimes used medicinally, and is said to be good for maladies such as constipation, headaches, cough, and diarrhea. It contains vitamins A and C, and provides a generous amount of vitamin K. The spicy herb is appreciated by chefs too, who use it as an attractive garnish or to flavor hot drinks or other dishes. Cinnamon basil requires full sunlight and well-drained soil. Dig a generous amount of compost or well-rotted manure into the soil before planting. Allow plenty of space for Cinnamon basil, as the plant can reach heights and widths of up to 3 feet (1 m.). Water cinnamon basil plants as needed to keep the soil lightly moist but never soggy. It's recommended as a ground cover on moist, sandy, well-drained sites in full sun to part shade. It begins flowering in late July or August, and flowers can be harvested every 10 days. To dry chamomile flowers, collect them in the morning when the dew has dried. Spread them on newspapers in an airy room and turn them often until thoroughly dried. Store them in a cool, dark, dry place, preferably in tightly lidded containers. Chamomile has been used as a traditional medicine for thousands of years to calm anxiety and settle stomachs. In the U.S., chamomile is best known as an ingredient in herbal tea. Because chamomile can cause uterine contractions which can lead to miscarriage, the U.S. National Institutes of Health recommends that pregnant and nursing mothers should not consume chamomile. They grow in clumps from underground bulbs and produce round, hollow leaves that are much finer than onion. In mid-summer, they produce round, pink flowers similar in appearance to clover. Chives prefer a full sun location and are tolerant of a wide variety of soils but will grow best in soils that are high in organic matter. Chives are most commonly propagated by dividing the clumps in early spring. Clumps should contain about 4-6 bulbs. Plants that are harvested frequently benefit from supplemental fertilizer during the season. Chives can self-sow and overtake a garden unless flowers are removed before they fade. Chives also make attractive edging in the perennial border and flowers can be cut for arrangements.

French Tarragon (Artemisia dracunculus var. sativa) is the commonly grown temperate-zone tarragon, with a sweet anise flavor, used for culinary purposes. Clip the leaves into salads and on top of soups, to flavor sauces, or with shellfish, fish, chicken, and turkey. French tarragon plants grow up to 24 inches high and 12 inches wide in two years. The leaves are narrow, up to 2 inches long, and have a fresh green color. The flowers are tiny, pale green, and sterile. Don't confuse it with Russian tarragon (Artemisia dracunculoides), a close relative which has no flavor. Tarragon is not particular about temperature and can be grown from Zone 2 to Zone 9. Tarragon’s roots must have fast-draining soil to prevent rot. Plant tarragon in a raised bed where good drainage is ensured. Divide tarragon in late winter or early spring. Young plants need to be watered every other day during dry weather. Mature plants should be watered every three days to encourage a continual supply of fresh leaves. Mature plants can survive for long periods without water, but under these conditions they will not grow new leaves. Although average to good garden soil is adequate for tarragon, top-dress with compost every winter to ensure that plants growing for six or seven years do not lose their flavor. If your soil is acidic, tarragon benefits from an application of dolomite for alkalinity and magnesium. Container growing is easy and works well for one season, but the roots soon take up the space of all but the largest container, and the leaves lose flavor. We have had no problems from pests and diseases and theorize that the anise flavor works as a repellent. Cut back in June for a continuous harvest. Lemongrass oil is used as a pesticide and a preservative. Research shows that lemongrass oil has antifungal properties. In the garden, lemongrass forms a tall, grassy clump 3 to 5 feet tall. Its appearance rivals that of many ornamental grasses and can easily fulfill a similar role in the landscape. Due to its tropical nature, lemongrass usually only survives winters in zones 8 and warmer. In middle Tennessee, try growing lemongrass as an annual in planting beds or tucked into pots. This citrus-flavored grass overwinters well in a dormant state in a cool, dark spot indoors, or you can grow it as an indoor herb through winter in colder zones. Harvest lemongrass for its bulbous stem bases, rich with lemony flavor, or clip leaves for infusing tea and soup stock. Start harvesting as soon as plants are 12 inches tall and stem bases are at least ½-inch thick. Cut stalks at ground level, or hand-pull entire stalks. You want to get the entire swollen base, which resembles a scallion or green onion. If a few roots come up with the stalk, don’t worry: It won’t harm the plant. The edible portion of lemongrass is near the bottom of the stalk. Carefully cut off the grassy top part of the plant; use caution, as this can be razor-sharp at times. Leaves can be bundled and added to the liquid in a teapot or stock pot, then simmered to infuse lemon flavor into the brew. Take the lemongrass base and peel the outer fibrous layer to expose the inner white, reedy part. To store, freeze this part either whole or chopped. To make slicing easier, first crush the stem base with the flat blade of a knife. The heart of the stalk (the part you want) has the consistency of soft butter and will then slice easily.

This slightly peppery and bright herb is so much more than a bit of green on the side of your plate. Parsley is a great source of vitamin C, calcium, iron and fiber. Raw parsley also acts as a breath freshener and has anti-inflammatory properties. To store parsley, rinse with cool water and then wrap in a slightly damp paper towel in a resealable plastic bag and keep in the fridge. You can dry your fresh parsley by tying a bunch together and hanging it upside down in a cool, dry place. Lemon Thyme's glossy green foliage can be sheared to form one of the knots in a traditional knot garden. Easy to grow, lemon thyme needs only a regular light pruning after the first year. It tolerates drought and deep freezes well. It is best cultivated in a hot, sunny location with well-drained soil with a pH of about 7.0; it prefers slightly alkaline conditions. This hosta is slug resistant, and can also tolerate a bit of sun. Good for planting in mixed containers or tubs. Sunlight requirements of different hostas vary widely, depending on foliage color, which ranges from a deep blue to a light chartreuse to a soft creamy white. In general, the lighter the foliage, the brighter the sun. The deeper darker foliage retains it color best in moderate shade, while the variegated varieties need more sunlight to keep their white and gold stripes. All hostas need some shade and few, if any, will do well in strong direct sunlight. Plant in rich organic soil with a slightly acidic pH. Lovely, compact and variegated, this midsize hosta forms an attractive, dense mound of smooth, heart-shaped, chartreuse gold leaves with striking irregular blue-green margins. An excellent hosta for a small garden with a compact, medium-sized mound of gorgeous, glaucous blue-green, flattened, heart-shape leaves. Pairs well with bright, variegated hosta varieties. Slow growing. Retains its color well in the heat of summer in shadier locations. Dies back in winter. Tall stems of showy pale lavender-mauve flowers on 26" stems emerge in summer. The Scoville scale measures the amount of capsaicin in a food. Capsaicin is the chemical compound that gives the burning sensation in peppers. The 7 Pot Douglah, also known as the 7 Pod Douglah or Chocolate 7 Pod, is one of the rarest and hottest of the 7 pod strains. Currently the 3rd hottest pepper in the world behind #1 The Carolina Reaper and #2 Trinidad Moruga Scorpion. The Douglah is characterized by a dark brown/deep purple skin with many “pimples” over the surface. The pepper starts out green and matures to the dark color uniuqe to the Douglah. When you slice a fresh Douglah open, you will immediately see pools of liquid capsaicin oils that give this chili so much heat. The placenta is where most of the capsaicin oils are stored. This “thing” called the Carolina Reaper (AKA HP22B) is better described as the demon pepper child that was invented by man. There is nothing normal about this pepper because it was bred for heat and that it is. Oddly enough this pepper has excellent flavor as well. The Carolina Reaper pepper has a sweet and fruity flavor, that is right before the heat kicks in. Just one pepper has the pungency to spice up 100’s of dishes. It is perfect to add to chili, stir fry or marinates without affecting the flavor of the original dish.

Ghost Pepper - Bhut jolokia is a small chile typically of a red or orange color and can have bumpy or smooth skin. The peppers are about 2.5-3.5 inches long and 1 inch wide, about the size of your thumb. They are a thinner skin than many chiles, and (unlike jalapeños) contain only half of their capsaicin (the spicy stuff) in the vein or pith and the other half in the actual flesh of the fruit. That means there's no escaping the heat when cooking with these bad boys.
