As opposed to shiitakes, which impart an intensely meaty flavor and a sturdy texture, oyster mushrooms are delicate, tender and cook very quickly. This makes them a great option for quick meals, vibrant stir-frys and simple soups. When it comes to variety, usually the lighter the color of oyster mushroom, the more subtle the flavor. Here is one recipe from Food52 for you to try, but the internet is full of ways to use these mushrooms. This recipe is super easy, super cheap ingredients, super yummy, super perfect for lazy weekend brunch or breakfast.
Oyster Mushroom Omelette
Ingredients
6 eggs
1 tablespoon mustard
1 clove of garlic
6 pieces oyster mushroom
2 tablespoons cooking oil
salt and pepper to taste
Directions
1. Lightly beat the eggs with mustard. Add salt and pepper to taste.
2. Mince garlic. Heat the cooking oil on a wok or pan, sautee garlic until fragrant, add the oyster mushrooms.
3. Mix the beaten eggs, mix well so it won’t stick on wok/pan. Cover for a minute if you want a firm omelette.
4. Serve as is or with Salade Verte. Enjoy!

Hello everyone, it feels so good to be back in the kitchen and participating in the Market again. I am now able to offer a new size option for a few of my items. I rolled out the new size last week on my quick breads and the coconut cake. This week I can now offer the German Chocolate cake, the carrot cake and I added a pineapple upside-down cake as well. I also added a Lemon Blueberry under the quick breads. This new 5×4 pan is the prefect size for when you want a little something but a whole bread or cake is just to much temptation. If you would like to suggest something you would like to see offered in this size you are welcome to let me know. I’d love to hear from you. Now I’m off to my kitchen to create.

From Linda at Dogwood Valley Greenhouse:
The July heat is hard on plants. Be sure to water them enough to maintain their structure and not become weak and limp. Remember: more sun, more water. Also just about every plant prefers a gentle soaking to a dumped bucket. Keep them happy and they will reward you with lots of blooms and/or fruit.
Dogwood Valley Greenhouse has some late season bloomers beginning to show their stuff. While the coneflowers and pincushions continue to bloom all summer, they are joined by the beautiful late double orange daylilies. The gorgeous blue plumbago, or leadwort, are also just beginning to bloom now.
The ferns have been restocked, and we have a good supply of 11 varieties. Varying in height, foliage color, and texture, they will add a lot of interest to the shady areas of the garden. And we have also restocked a good selection of Fresh-Cut herbs, with 7 varieties currently available for your cooking pleasure.
Does your garden need a shrub for variety? We have some beautiful large Pieris (Andromeda) which would be a beautiful specimen plant in a shady area. They are carefree and even deer resistent! From the early spring red foliage to the lovely white flowers, what’s not to love about Pieris?

Sow’s Ear Piggery has added new pork products for summer grilling or smoking: “T-bone” pork chops, Bratwursts, and Boston Butt shoulder. Our ground pork is also excellent for burgers on the grill, or is delicious in tacos and Asian stir-fry recipes. We also have cutlets, stew meat, and shoulder steaks available. Most perennials seem to prefer to bloom in early spring, so there is a riot of color in the greenhouses in April and May. It’s settled down a lot now, but there are still some new faces each week. This week: the late daylilies, red-veined sorrel, and new begonia baskets, as well as a couple of African violets just coming back into bloom after a rest.

This week we welcome “Fungalicious” to our market. This small exotic oyster mushroom farm in Tullahoma grows several varieties of oyster mushrooms. Although not a certified organic farm, everything is naturally grown. These mushrooms have a delicious mushroom flavor with a great texture.

How about experimenting with some fresh herbs to add flavor to your Independence Day celebration meal this year? As a cross between turnips and cabbage, rutabagas have a sweeter, buttery and sweet-savory flavor. The roots, which are high in fiber but low in calories, can be eaten raw or cooked, they can be mashed, roasted, sautéed, fried, added to soups, and even eaten raw in salads or coleslaw.
Holy Basil (Tulsi) has floral and peppery notes with a spiced, lemony aroma and flavor. It is taken to ensure vibrant health and longevity. Tulsi is an adaptogenic, digestive, expectorant, and antioxidant.
Borage has many health-promoting properties, and has been used to decrease inflammation, improve skin health, and decrease symptoms of asthma. The leaf has a cucumber-like taste, and is often used in salads or as a garnish. The flower has a sweet honey-like taste and is often used to decorate desserts and cocktails, most commonly, frozen in ice cubes.

All our products are direct from grower/producer to consumer, with no middle men handling.

This week we are spotlighting our cardamom honey, green leaf lettuce, and microgreens.
Cardamom can be used to treat indigestion, gas and constipation. It also lowers high blood pressure while increasing blood circulation – boosting energy and lowering anxiety. Honey contains antioxidants and has antibacterial and anti-fungal properties.
Our soil and sun grown lettuce has Vitamin A, Vitamin B6, Vitamin C, Vitamin K, and a host of minerals (including Magnesium, Manganese, Folate, and Potassium), as well as antioxidants, and it is delicious!
Microgreens have much higher nutrient levels than the full grown veggies, and work well added to smoothies, salads, or baked dishes. Microgreens are a little larger and older than sprouts but not quite as large as the regular vegetable, and they taste great! We have Turnip-Mustard, Speckled Pea, and Sunflower microgreens.

Your shady garden will really benefit from the addition of our hardy begonias, which will begin bloom within a month or so; and our beautiful ferns, including our own Tennessee native Christmas fern. I’m relisting perennials as fast as they grow large enough to sell, but I don’t have a lot of them left. I have several more beautiful daylilies coming into bloom for sun or part sun. And now is a great time to plant that herb garden you’ve been thinking about. Please check back weekly for availability, as I’m running out of several plants.
Coming soon: restocked elderberry bushes and a few late-season bloomers.
